Holiday Recipes {Part Two}

Today, I'm sharing two of my favorite recipes for hosting big groups that we used for New Year's Eve!

Crockpot Swedish Meatballs 
Mom's Hot Frito Dip

Crockpot Swedish Meatballs
These are great because the recipe makes a large batch so unless you have a completely full house of people, your most likely going to have some left overs.  I've served these by themselves and also with mini rolls to make mini sandwiches.  We've also eaten them leftover poured over pasta (or you could also use rice).  So, these really could be used for a meal, appetizer or leftovers.

Ingredients:
2-2 1/2 pounds frozen (appetizer size) meatballs
1 can cream of mushroom soup
1 can golden mushroom soup
1 can beef broth
1 envelope packet brown gravy mix
1/2 cup water
Directions:
Prep Time: 10 minutes
Cook Time: 6 hours

Whisk all the ingredients (other than the meatballs) together in a bowl.
Put meatballs into crockpot, pour mixture over top.
Set crockpot to low.

Mom's Hot Frito Dip
Mom has been making this dip for YEARS to bring to parties and such and it's always such a hit.  Like the pan is always empty when it's time to leave.  When I was more "picky" I never really got into it but now I love love love it just like everyone else.

Ingredients:
(2) 8 oz. cream cheese, softened
1 cup sour cream
1/4 cup chopped green pepper (could add in a little more)
4 tablespoons milk
1/2 teaspoon garlic powder
2 tablespoons onion, chopped 
1 packaged chipped beef, shredded (could use up to another 1/2 a pack)
1 cup chopped pecans, sautéed in 4 teaspoons butter (optional)
*I'm not big into pecans so I left these out, but I know most people love the taste it brings to the dip
Directions:

Combine the first 7 ingredients.
Top with pecans in a casserole dish.
Bake at 350 degrees for 20 minutes, just before serving.
Serve with large fritos.
