Today, I've two sweets and a salty fast to share.
It's hard to believe Easter was already a week ago; and I'm just now getting around to sharing!
First up, a cadbury egg trifle that I've had a lot of questions for the recipe. It's super easy and can really be used for any holiday or even non-holiday desserts - just sub out the cadbury eggs for another candy/chocolate item of your choice.. next up for us might be reese's pieces.
Cadbury Egg Trifle
Ingredients:
vanilla pudding (two boxes)
marshmallow topping (two tubs)
brownie bites (crumbled)
cadbury eggs (I used almost three boxes)
Directions:
Start by mixing up the vanilla dressing by following the directions on the box.
Crumble up the brownie bites as well as cut up the eggs.
Layer the brownie bites on the bottom, then the pudding, then marshmallow, the cadbury eggs.
Repeat entire order for another layer on top.
This would be really easy to make individual - possibly easier and would make a better display.
Like I said above, you can also sub in other candy/chocolate to make this for any occasion.
Don't skimp on the pudding - it's d e l i c i o u s.
Confetti Bars
These are another one that can be made for any holiday, and occasion, etc. just by switching out the m&m color… easy peasy.
These are gooey and when they are fully cooked; they taste barely cooked. Perfect.
Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1/4 cup and 1 tablespoon brown sugar
1 teaspoon vanilla extract
1 and 1/2 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cornstarch
1/4 teaspoon salt
1 and 1/4 cup white chocolate chips
your chosen amount spring m&m's
Possible extra ingredients for toppings:
marshmallows

Directions:
Combine the butter, sugar and brown sugar (using a hand or stand mixer).
Mix in the the egg and vanilla.
In a smaller bowl combine flour, baking soda, baking powder, cornstarch and salt.
Slowly add the dry ingredients to the wet. (I used a spatula for this part - but you could probably also still use the mixer).
Stir in some of the white chocolate chips.
Nicely press the dough into a baking dish.
Bake at 350 degrees for 10-13 minutes.
Remove and top immediately with the m&m's (you could also top at this point with mini marshmallows but I chose not to because the other dessert I was serving had marshmallow)
Put back in the oven for 1-2 minutes.
Remove and sprinkle a few more white chocolate chips.
I chose no go with no topping but if you really wanted something on top, another alternative would be the frosting I mentioned above.
Hashbrown Casserole
After that sweets overload, I've got something salty but equally as delicious.
For Easter my mom was handling just about all the main courses (Thanks, mom!) and I was up for potatoes -- since I was doing the appetizers and desserts, she suggested that I google hash brown casseroles because they are so easy and quick. WHY have I never done this before?!
So easy. I threw it together while everyone was enjoying appetizers. We were good to go.
Ingredients:
two pounds frozen hash browns
1/2 cup butter, melted
1 can cream of chicken soup
1 pint sour cream
1/2 cup onion, peeled and chopped
2 cups grated cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
Directions:
Mix all the ingredients together in a large mixing bowl.
Transfer into a large greased baking dish
Bake at 350 degrees for 45 minutes
Enjoy!
