Parmesan Chicken… Not Chicken Parm

Derek and I struggled with the name of this chicken.. He kept thinking we were having Chicken Parmesan when really we were just having Parmesan Chicken.. big difference.  This recipe is so delicious and filled with flavor. We tested it out a couple weeks ago and actually are repeating it tomorrow night!

Ingredients:
2 boneless, skinless chicken breasts
1 cup light mayonnaise
1/2 cup shredded parmesan cheese + extra for the top
1 1/2 teaspoon seasoning salt (reddish salt, not the regular salt)
1/2 teaspoon pepper
1 teaspoon garlic powder
*I adapted this recipe since there is only two of us - if you double it to four chicken breasts, you will have enough of the seasoning mixture because we had some left over.  Can easily be tripled, quadrupled, etc. for bigger groups
Directions:
Mix together all the ingredients other than the chicken (mayonnaise, parmesan cheese, seasoning salt, pepper, garlic powder)
Lay the chicken breasts in a greased pan and spread the mixture evenly over each piece of chicken - make sure to completely cover the chicken.  Sprinkle a little extra cheese on top.
Bake at 375 degrees, uncovered for 45 minutes
Enjoy!! We served ours with some potatoes and vegetables and the flavor of this dish is just delicious!
