Cinco de Mayo is just one week away and any excuse for Mexican and margaritas works for me. All the Mexican restaurants are always so crowded and Derek will be headed out of town the next day so I foresee us cooking something easy and light to enjoy at home but I've rounded up some of my inspiration for the holiday below...

ReplyDeleteI cannot believe it is almost May 5th! Everything you have here looks delicious - I may need to make those skinny enchiladas...and those churro cupcakes, oh my they look good!
ReplyDeleteYUM to all of this! I forgot that next week is May. We'll be at a wedding the next day so probably won't get to partake in many of the festivities, but hopefully we can get a Mexican food fix in there!
