Tailgate Treats: All of the Dips {Part Two}

I can't believe how quickly college football season is going by.  We have just one more home game and just two more games in the regular season (other than a bowl game).  Like always, I'm wishing the season was a little bit longer than it actual is but at least we've gotten another great season under our belts.

I'm sharing my final of our tailgate recipes this week - in time for everyone to give them a try before season's over.  Today it's all about the dips again (you can see part one with tailgate dip and sausage dip  here). and both are on the mexican side as well as eaten with tostitos.

sausage bites
pepperoni pizza rolls
crockpot sweetish meatballs

Mexican Layer Dip:
We used to get a delicious mexican layer dip at Wegman's (their tailgate stuff in State College is the best!) but it was always too much dip and we'd wind up throwing half out.  It seemed maybe easier to make our own, customized to what we liked on it.  We used the Wegman's dip as guide and the new dip turned out delicious.


Ingredients:
 can refried beans
guacamole
sour cream
cheddar cheese
cherry tomatoes 
black olives

Directions:
+ spread the refried beans on the bottom of the pan, be generous, we used the whole can
+ spread guacamole on top of the beans, again be generous (who doesn't love guac)
+ spread sour cream on top of the guacamole
+ sprinkle cheddar cheese on top of the sour cream
+ top on the center with diced tomatoes and then olives

Black Bean Salsa:
In addition to just serving regular salsa with our mexican type dips, we really wanted to try out a homemade heartier salsa this year.  Enter black bean salsa - so easy to make and had my  house smelling delicious until serving time.  The only downfall - it makes a huge batch so be ready to eat!



Ingredients:
can of black beans
can of white shoepeg corn
two cans rotel
green pepper
red pepper
garlic seasoning

Directions: 
+ chop the peppers and add into the bowl
+ add the can items: black beans, corn and rotel
+ sprinkle in some garlic seasoning
+ blend together and enjoy

  8. Black Bean Corn Salsa is my favorite! Have you tried adding cilantro to it? I made it this weekend for our tailgate and because it makes so much, I split it up into two batches: one for the tailgate, one for snacking on this week at work. Best decision ever.

  23. I love making heartier salsas, and the black bean salsa sounds wonderful! My mom has a similar dish, but I like that this one seems to have more of a tomato base than a bean base. It's seriously so sad that college football season is almost over! I don't know what I'm going to do with my weekends once it's over!
