Tailgate Treats: Tortellini Pasta Salad

We won't be back up to State College until mid-November (unfortunately we'll be out of town in another direction for this weekend's home game) and by the way time is flying, that will probably be here before we know it! By that point I'll be highly craving some of our tailgate favorites as we've been doing other foods for watching from the comfort of our own couch (aka foods that you don't have to worry about transporting).  Today I'm continuing on sharing in our favorites - up next… a simple and delicious tortellini pasta salad.

Tortellini Pasta Salad:
A twist on the regular pasta salad and very similar to one of my new favorite appetizers this summer (tortellini pasta salad skewers) we've not been able to live without some tortellini pasta salad at our tailgates this season.  In the past it's been regular pasta salad or even pasta salad shaped like little Nittany Lions but the tortellini adds a little extra element to it.  In fact, this can be done like my summer appetizer on skewers (the only ones we could find in the grocery store in State College were too thick so it didn't work well) but it's just as tasty - and easier - if you just mix it all together in a serving bowl.


Ingredients:
two packages tortellini
one block sharp cheddar cheese
one package cherry tomatoes
salami
one container olives
italian dressing

Directions:
+ Boil the tortellini as instructed, run under cold water then add a little dressing so it doesn't stick
+ cut the cheese and salami into cubes, cut the tomatoes in halves
+ mix the cheese, salami, tomatoes and olives in with the pasta
+ drizzle more dressing throughout
+ refrigerate until serving
+ serve with dressing bottles to drizzle on individual servings
+ enjoy!

  6. This definitely seems like a great idea for a tailgate, and super easy too! I love that you can just pop it in the fridge once you're done and you don't have to worry about reheating or anything like that.
