Super Bowl 2015

Thank goodness the game this year was better than the blow out last year.  I didn't really like either team at all but I was rooting for the SeaHawks - that ending was crazy!  Up until the last minute of the game both teams were still thinking that they had a shot at being the Super Bowl Champions!

We usually watch sports and host people in the basement but for most of the first half I was prepping appetizers/in the kitchen so everyone watched from the family room!  Super Bowl food is always a highlight and this year we tried out some new recipes as well as some old favorites and had three crockpots going, it was pure food bliss… 

Appetizers 
 Deviled Eggs & JalapeƱo Poppers

Pretzel Bites (We also used the Lil Weenie cheese mixture for these)

Buffalo Chicken Dip (this was delicious and the recipe is also below)

We had this cheerleader cake leftover from part of the groom's cake I had for Derek at the rehearsal dinner.  I should have put it out during one of the Cowboys' playoff games but we were holding out hope.

Let's Get to the Recipes, Shall We?!

Lil Weenies & Cheese Dip
Ingredients:
1 package beef cocktail wieners 
2 tablespoons butter
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 cup beer
1 jar cheddar pasta sauce
1 teaspoon bottled hot sauce
1/2 teaspoon chili powder 

Wieners Directions:
Heat the wieners at 400 degrees for 15-20 minutes

Sauce Directions:
Heat butter on low heat 
Add in onion powder, garlic powder, beer, pasta sauce, hot sauce, chili powder
Stir everything together, heat through on a medium heat 
Move the mixture to a small/medium crockpot - put on high until time to serve then low or off while serving

*Next time I make this recipe, I would probably try 1/2 cup to 3/4 cup beer to make it a little bit thicker

Buffalo Chicken Dip
This dip is definitely going to be a regular in our house - it is SO good.

Ingredients:
(2) 8 ounce packages cream cheese
(2) 12 ounce cans of chunk chicken
1 cup ranch dressing
2 cups shredded cheddar cheese
frank's red hot sauce
tortilla scoops

Directions: 
Set the cream cheese out to soften about 1/2 hour before making
Add the cream cheese to the pot and heat in the microwave (I did about 4-5 20 second intervals - this makes it much easier to mix)
Add the chunk chicken, ranch dressing and cheddar cheese - stir all these ingredients 
Let this mixture cook on high - about ten minutes after starting, pour in 1/2 cup of frank's hot sauce (continue this every 15 minutes or so until your happy with the spiciness of the dip)

Cook the dip on high in the crockpot for about an hour or until it becomes creamy.  Turn onto low until time to serve.

*Next time I would do between 1 cup - 1 1/2 cup of hot sauce - I did 2 cups this time and it was good but definitely had a kick to it, but still very delicious.

Chocolate Chip Cookie Bars
Ingredients:
1/2 cup butter
1 cup brown sugar 
1 egg
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt 
1/8 teaspoon baking soda
desired amount of chocolate chips (full size or mini - I just happened to have mini in my cabinet)

Directions:
Melt butter in microwave
Add brown sugar, vanilla and egg to butter
Combine dry ingredients in a separate bowl (flour, baking powder, salt, baking soda)
Add the mixture from the dry ingredient bowl gradually - probably in two parts 
Pour mixture into a greased 9x9 pan
Sprinkle with chocolate chips
Bake at 350 for 20-25 minutes

*make sure to lick the bowl :) this batter is delectable 

Peanut Butter Cup Cookies
This recipe is going to be my new "go to" dessert.  They are so easy to make, but look like they take a little time.  They are soft and delicious and unique.

Ingredients:
Betty Crocker peanut butter cookie mix 
(comes in a bag on the baking aisle near cake mixes)
One egg
3 tablespoons oil
2 teaspoons water
One bag reese's peanut butter cup miniatures
Sugar for dipping

Directions:
Mix the cookie mix, egg, oil and water
Roll dough into a small ball, dip in the sugar and get a nice coating 
Place the cookie dough ball in one compartment of a greased mini-cupcake tray
Continue until all dough is gone (makes about two dozen)
Bake at 375 degrees for 8-10 minutes
Place peanut butter cup in the middle of cookie right after removing from oven
Let cool then pop them out, store and enjoy!

 We try to pay extra attention to Nash because Derek and I both have always been super close to him.  Here Derek is with both of the buddies.
Since I didn't like either team in the game this year, in the slightest bit, I had the same idea as Reese Witherspoon...

Weekending: Stella Rules All, Hockey Vally & Frozen Pizzas {Weekend Recap}

This weekend was super low key, early mornings and early to bed, hibernating at home, freezing and… revolved around little miss Stella!  It was awesome to have a weekend with very little planned and a lot of time at home.  We started off the weekend with Stella's first visit to the vet.  She did great and everyone loved her.

Stella's car seat still wasn't in but she took a liking to the laundry basket &  Her name on the welcome board.

She thought the visit was fun and was overwhelmed with attention and loved it.
When 5pm hit on Friday I almost forgot it was the weekend!  And had no clue what time it was #lackofsleep.  I spent the day home with Stella (it wasn't perfect but went better than the disaster that was Thursday.. stories to come this week).

I made dinner Friday night for my parents, brother, Derek and I since it was just Stella's second day, we wanted to be home.  Note to self:  DO NOT cooke dinner when you have a brand new puppy and your husband has to work a little late.  Luckily, I was making a crockpot meal but it was a little hectic trying to get the sides in the oven, etc.

We had crockpot Chicken Parm Sandwiches for my family to "meet" Stella, except my parents had to rescue me Thursday night since Derek was working late (another note to self: get a dog on a day you can both be home) so it was really just a fun family dinner but Davey and Nash met Stella.  The recipe was an experiment and it was good but not sure if it was a keeper.

Nash and Stella of course loved each other. Well, Stella loved having another dog around since she was used to being with so many and Nash loved Stella's baby toys.  They had a good play session though and Stella found a love for Nash's big toys.

 Saturday morning kicked off with a family play session in Stella's play pen.  It was great to finally have an extra set of hands and to be able to enjoy our puppy together.
 We each took a nap, Derek ran some errands and I did some housework and enjoyed a lengthy relaxing Saturday morning at home (it's amazing how much time you have when your up early!)
We took a Stella break and headed out to Philadelphia because Penn State was playing at the Wells Fargo Center.
 Every once in a while Steve brings us to his work box, the Nova Care box for misc. events.  Saturday, Penn State was playing against Vermont in Philadelphia for the third time (I
think Davey and Steve have gone in the past) but Steve was able to snag 5 tickets for the box so the whole family could go!

It was our first time leaving Stella so Derek and I got there at the end of the first period but we all had a great time!  I dove into the suite food right when we got there of course - chicken fingers, pizza, stromboli, salad, chips & salsa, pretzels, cookies - and Derek and I picked up some Chickie and Pete's fries on our way up.  I woke myself up (still getting used to those early morning wake ups) with a treat of a non-diet, regular soda.

 It was a great game and tied for a while but Penn State pulled out a big win.
Derek & I missed the final goal but we lasted long enough to hear Penn State take the lead… we had just got up to get our coats as they scored to advance from the tie.
Post game nap time :) and finally catching up on How to Get Away with Murder.  I love love love this show and am very sad that there are only three episodes left this year.  I SO hope it's back next year but how could it not be with one of the best ratings?!

Who doesn't love a good night in?! I think just about everyone I know stayed in on Saturday night, including us.  I blame the freezing temperatures and biting wind.  We were lazy, lounging, and not super hungry so we had a glamorous of chips and dip and some frozen pizzas along with an Entourage marathon.

Sunday I escaped my husband and my pup and asked my parents to come to the earlier church service so I didn't have to sit alone, they happily agreed.  Some quick errands were done and then just catching up around home before our Super Bowl Party!  We had my parents, brother and cousin over; we usually use the basement, bar area and "man cave" for hosting but since Stella is primarily in the kitchen and I was cooking, everyone stayed upstairs.

What a good game! So much better than last year.  Like everyone, I cannot believe that ending - the Patriots probably should not be Super Bowl champions right now but whatever, I didn't like either team playing.  I almost called it quits around 9:45 and went to bed but I'm glad I didn't miss any of that!
Katie Perry was also fantastic, not quite Beyonce, but pretty good!

Pinspired

Tomorrow, I'm getting "pinspired"with these ladies… 
I'm not big into Sunday posts but with the Super Bowl today and Valentine's day around the corner, my posts are full this week so I defied to squeeze this one in early to be able to link up.  I LOVE the idea of finding outfits on Pinterest and getting "pinspired" because I usually have a lot of the staple items in my closet and just don't think to match them the way that someone else does!

 My favorite scarf, I'd pair with anything!  This was another great day look - office Friday - because the shirt is a looser style.  I'm also obsessed with my gigi new york clutch from Christmas which I would never use for work because I have a big purse which it's inside of each day.  Never know when you'll need a clutch and it keeps my coupons and gift cards organized in the mean time.
